Warm and Cozy Meals for Meatless Mondays

Happy New Year! I’m back with some recipe ideas for Meatless Mondays for winter. That’s right, it’s actually cold in Scottsdale and I’m thrilled because I love warm and cozy meals made in slow cookers, baked in casserole dishes or in big pots simmering on the stove. You should make these ASAP because it won’t stay cold here for long!

  • Vegetarian Chili: My children really look forward to chili night at our house and I think most of it has to do with all of the toppings they get to sprinkle or dollop on top. One of our favorites is this slow cooker version. When it’s dinner time my children help set the table and put out bowls of shredded cheese, tortilla chips, black olives, salsa, avocado, sour cream or whole plain yogurt.  (Note: I use regular chili powder and paprika)
  • Soup: “I love soup” is an understatement. I would serve soup all winter long if my family would oblige. Our two household favorites are broccoli cheese soup and tomato soup paired with bread or grilled cheese sandwiches. img_2876
  • Baked Polenta Pie: This casserole is one of my all time favorites and it’s the one I make most often for friends and family. I also pack up a fresh salad and a decadent dessert for them. (Note: I usually use store bought tomato sauce or marinara because short cuts complete me)
  • Vegetarian Lasagna: What’s better than a hot and cheesy pasta dish? One that can be prepared ahead of time or even frozen for a night you just can’t make dinner! Trust me, you will not miss the meat in this lasagna.
