Sunday Meal Planning Series {The Salad of All Salads}

Welcome back to our Sunday Meal Planning Series. With all of the PGA and Super Bowl events (read: unhealthy eating) this weekend, we thought we would share our favorite salad recipes to round out your dinners in the coming week!

My all-time favorite, ridiculously simple, but oh-so-tasty salad recipe from epicurious is below. I almost don’t want to share it so I can continue to pass it off as my own at all my dinner parties. You could have it just as is, or modify the recipe like I do to make it appeal to the whole family:

The House Salad, modified:
1) Omit jicama (not familiar with this ingredient!)

2) Omit the crème fraîche (to keep the dressing a little more healthy)

3) Omit pomegranate seeds (I’m sure it would taste lovely, I just never seem to have them around the kitchen)

4) Use red wine vinegar instead of apple cider vinegar

The salad tastes so fresh and yummy — I hope you enjoy!

Another one of my favorite salad recipes is fairly simple and common, and it can also serve as a great side dish!

Spinach Salad With Berries and Goat Cheese
Salad
Baby spinach (1 bag)
Green onions bunch, chopped
Fresh dill, chopped
Handful of strawberries chopped
Handful of roasted almond slivers (available in a bag, don’t forget to toast them lightly first)
Goat cheese crumbles

Dressing
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup sugar
2 crushed garlic cloves
1/4 tsp dried mustard
1/4 tsp onion powder
1/4 tsp salt & 1/4 tsp pepper

Mix salad ingredients in a large bowl. Prepare dressing, stir and pour over salad and mix. Enjoy!
