Sunday Meal Planning {Italian & Mexican Easy Weekday Meals}

In this week’s Sunday Meal Planning Series we are featuring two EASY weekday recipes (1 Italian and 1 Mexican) to help round out your week. With this series we hope to help you find a few great meals that you can cook for your family. And be sure to check back on Sundays for more meal planning ideas.  

1) Turkey and Spinach Manicotti:  I love lasagna but wanted a slightly healthier version of the meaty-cheesy traditional recipe. This recipe one uses ground turkey instead of ground beef and I use a mixture of cottage cheese and ricotta (versus only ricotta in the recipe), which also gives the health-o-meter a little help. The other thing I do is chop the cooked ground turkey, spinach, spices and onion for a couple of pulses in my food processor, to make the filling more ground. It looks lovely coming out of the oven, so it makes a great entertaining dish too!

2) Slow Cooker Chicken Fajitas: This is the most SIMPLE, yummy, warms-you-in-the-tummy meal! The only change to the recipe is that I add 1 tablespoon of butter to the bottom of the slow cooker. Then I follow the recipe: add cut bell peppers, onions and chicken breasts to the crock pot. Pour a package of salsa (I get the roasted salsa at Trader Joe’s) over the chicken and peppers. Cover, turn on for 6 – 7 hours and walk away. Stir about 4 -5 hours in to help break up the meat. Return that evening and dinner is done! You’re welcome!
