7 Ideas For Using Up Strawberries

As a busy mom I find myself shopping and buying lots of groceries on a weekly basis (if not more), and having so many left-overs most of which are tossed in the trash. It drives me crazy to waste as much food as we do in our family. I am on a mission to waste less and create more when it comes to the food in my house.

One of the things that I seem to always have an abundance of is fruit. My daughter loves fruit just as much as I do, but no wonder, I ate an entire cantaloupe (in one sitting) while pregnant with her along with many other fruits I craved. In the summertime strawberries are one of my favorite things to buy, but I typically find myself buying them in bulk and can’t eat them all before they go bad. I wanted to make some things with strawberries to help me use up the mass quantities I always have in my fridge, and I thought I would share with you my family favorites! Enjoy!

1. Make Strawberry-Watermelon Popsicles

I used 1/2 C strawberries, 2 1/2 C cubed watermelon, Juice of 1/2 of a lemon, 1/2 simple syrup (equal parts organic sugar and water). Blend all the ingredients, pour and freeze. Very easy and you can make variation depending on the fruit you have in your house.

2. Freeze Whole Strawberries:

Just when the strawberries are turning mushy and past their prime, cut them in the size pieces you like, and lay them on wax paper lined baking sheet. Freeze them till frozen and put in storage bag and there you have frozen strawberries ready anytime you need a smoothie.

3. Dip In Chocolate

My husband knows that he can skip the flowers on any anniversary or valentine just as long he brings me chocolate covered strawberries. They are my weakness. Since we are close the the Fourth of July holiday I bought some white chocolate melting pieces, dipped the strawberries in the chocolate and then dipped in blue sprinkles.

4. Make a Strawberry-Beer-Rita

This drink recipe is a favorite in my house, and you better bet when we are poolside in 110 degrees weather, we are making these yummy libations. I usually make a classic beer-rita but since but this time I added some strawberry juice and it is delicious. I put one bottle beer, 1/2 can of limeade, 1/2 C Vodka in a blender and ice in a blender. Add 1/4 C strawberry puree in a glass, then layer with the beer-rita. Enjoy!

5. Fill Up With White Chocolate:

I bought a ready-made white chocolate cream cheese dessert filling at our local grocery store. I have also seen ready-made cheesecake filling which would be delicious too. Cut off strawberries tops and cut the end tip off just enough so it can stand up right. I took a strawberry “huller” and cored out a small pocket in the strawberry. I then put the white chocolaty filling in a plastic bag, cut the corner, and filled each little strawberry center with the yummy goodness and sprinkled with graham cracker crumbs. You can refrigerate for only a couple house before serving but best if served immediately.

6. Make Strawberry Ice Cubes

This is an easy and fun way to use up your strawberries, and fun for the kids when you put in their drinks! Plus they have a strawberry treat once the ice melts.

7. Strawberry Gel/Jell-0

Follow your favorite jello package instructions and add the fruit before refrigerating.

As you can see I have had lots of time spent in my kitchen with strawberries! I had a lot of fun finding different ways to use up the extra fruit in my fridge.

  1. The freezer! It’s so simple, but a brilliant idea. There will always be frozen strawberries and strawberry ice cubes in my house from now on! We’ve always done the premade angel food cake with strawberries and whipped cream in our house. An easy dessert, but a big treat for the kids.
