All About The Dinner Bowls

Dinner Bowls are my jam lately. They might take a little extra work on the front end, but they provide some healthy, well-rounded dinner options, usually WITH leftovers. If you have picky eaters like I do, bowls can allow you to break down the ingredients and serve your kids what they will eat, along with what you are already cooking. Rather than being a short order cook. Because ain’t nobody got time for that. 

These have been the go-to bowls at our house as of late…

Marinated Kale and Chicken Bowl with Sun-Dried Tomato Sauce (Pinch of Yum): No joke, we eat this once a week. Y’all, the sun dried tomato dressing is LIFE. I do prefer to use lacinato kale rather than the regular curly kale (and when in a rush, I put the kale in a ziplock bag with the marinade and have one of my kids mush it all around the help the process along). Sometimes I replace the quinoa with a Seeds of Change Rice pouch since 1) It is 90 seconds in the microwave vs 15 minutes of the stovetop and 2) My kids love those Seeds of Change Rice pouches and will gladly eat that with the chicken. And a note on the chicken – sometimes I do opt to bake my chicken in the oven for 15-20 minutes @ 425 degrees Fahrenheit vs. cooking it in the pan.

Salmon, Crispy Kale, Mushroom, and Avocado Bowl (Sirisouly Delicious): We discovered this bowl about a year ago, and have been making it non-stop ever since. As Siri suggests, serve with Sriracha if you love it. If you are running short on time or don’t want an extra stove burner going with rice, this is a great chance to use a Seeds of Change Rice pouch as well. Our three year old eats this salmon right off my plate (sans sriracha). 

Roasted Chicken, Butternut Squash, and Guacamole Rice Bowls (Foodie Crush): The flavor on this chicken is awesome! I imagine that you might be able to trade out the squash for sweet potatoes if that is more to your liking. And when it comes to kiddos, the ease of putting this together allows me to grill up some cheese quesadillas on the side so it is like a Chipotle meal at home with the rice, beans, and guac.

Healing Bowls with Turmeric Sweet Potatoes, Poached Eggs, and Lemon Dressing (Pinch of Yum): Another Pinch of Yum winner here. Obviously, I’m a fan of the cheat with using the Seeds of Grain pouch rice. Because the microwave wins over the oven this time of year. A quick google search will teach you how to poach an egg if you aren’t sure (it’s super easy, and I use mason jar lids when doing mine), or you can scramble the eggs for this recipe. You do you.

    These all look amazing. Full of wonderful fresh, nutritious and delicious ingredients. These look like the perfect solution for busy weeknights. Can’t wait to whip these up and find a new favorite go-to.
