Mini Ice Cream Sandwiches (For Your Mini People)

Did you know August 2 is National Ice Cream Sandwich Day?

Now anyone that knows me knows that I L-O-V-E ice cream in all forms and flavors. I couldn’t pass up an opportunity to celebrate this most wonderful of holidays. Despite the mess, these mini ice cream sandwiches were lot of fun to make with my son and really easy. I got the original idea from this post on Ice Cream Sliders and have been wanting to try them for a while and because they are mini, I didn’t feel as guilty letting the kids (or myself) eat them for a bedtime snack.

Now these may not look perfect, but I do not consider that a “pinterest fail” in fact, I think they look quite appetizing considering they were made by a three-year old. It’s also considered a success that the little one peeping over the counter didn’t eat them all before I was finished taking pictures. All you need is three ingredients (you probably already have them in your pantry) vanilla wafers, your favorite flavor of ice cream, and some colorful sprinkles.

Scoop out some ice cream, place it between two wafers and roll in sprinkles. Done! You are ready to celebrate! The only hard part is placing them back in the freezer to set for an hour or so.
